A look behind the scenes of the harvest
To understand what "Bird Safe" means, one must know how differently olives can be harvested. In highly industrialized agriculture (often in Spain or Italy, less frequently in Greece), the trees are often planted close together like hedges. To be efficient, huge harvesting machines drive over the rows.
Because olives are processed better at cooler temperatures, these machines often run at night . The problem is that many songbirds, like the robin, sleep in the trees. The bright light and noise of the machines paralyze them, preventing them from escaping.
Our approach: Tradition instead of high performance
The oil you find at ELJO comes from the traditional groves of the Peloponnese.

1. The structure of the groves
The oil we source comes from organic producers and small farms. The trees there are often old, gnarled, and located in difficult terrain. Huge industrial harvesting machines simply cannot be used there.
2. Harvest in daylight
In the regions where our oil originates, harvesting traditionally takes place during the day . Hand shakers or rakes are usually used. The advantage for wildlife is that the daytime disturbance causes birds to fly away before the harvest begins. They return later. It's a completely natural process that harms no animal.
Quality that feels good
We believe that food tastes even better when you know where it comes from. Gentle harvesting in daylight is not only good for the birds, but often also better for the olives themselves. The fruit is less crushed and arrives at the mill in better condition.
